Role Overview
The Operation Manager is the business owner of BA GÁC’s restaurant portfolio, responsible for driving profitable growth, operational excellence, and leadership development across multiple outlets.
This role ensures that each restaurant operates with discipline, consistency, and strong financial performance, while building capable Restaurant Managers who can lead high-performing teams.
The Operation Manager translates company strategy into clear operational execution, ensuring that expansion and growth occur without operational chaos.

• Strong and consistent EBITDA performance
• Sustainable same-store sales growth (SSSG)
• Highly engaged and stable teams
• Operational systems that scale across multiple locations
Key Responsibilities
1. Portfolio P&L Ownership
Own the financial performance of the restaurant portfolio.
Key targets:

EBITDA ≥ 15%

SSSG ≥ 15%
Responsibilities include:

Monitor revenue, margin, and cost drivers across outlets

Identify growth opportunities and operational inefficiencies
-
Work closely with Restaurant Managers to improve sales productivity

Drive disciplined cost management while protecting guest experience
2. Operational Excellence & Performance System
Drive operational discipline through structured BSC monitoring and performance review cycles.
Responsibilities:

Conduct regular operational performance reviews with Restaurant Managers
-
Track and analyze key metrics (sales, labor, service speed, guest feedback)
-
Standardize operating procedures and best practices across outlets
-
Ensure operational consistency and quality execution
The Operation Manager ensures operations are predictable, scalable, and measurable.
3. Leadership Development of Restaurant Managers
The Operation Manager’s most important job is building strong leaders.
Responsibilities include:

Coach Restaurant Managers in financial, operational, and leadership skills

Conduct weekly and monthly performance reviews

Identify leadership gaps and provide structured development plans
-
Build a strong leadership pipeline for future restaurant openings
Restaurant Managers should evolve from shift problem solvers to business leaders.
4. Workforce Stability & Culture
Maintain strong, stable teams across outlets.
Key target:

Staff Turnover < 5%
Responsibilities:

Partner with HR to ensure efficient recruitment pipelines

Support Restaurant Managers in team development and retention

Maintain BA GÁC culture of discipline, ownership, and continuous improvement
-
Ensure teams remain motivated while maintaining operational standards
Qualifications

Bachelor’s degree in Hospitality Management, Business Administration, or related field
-
Minimum 3+ years managing multi-site F&B operations
-
Proven experience supporting restaurant openings or concept expansion
-
Strong understanding of restaurant financial metrics and operational KPIs
-
Fluent or working-level English communication
