Head Chef – BA GÁC Modern Viet Grill

Job Summary:

We are looking for a passionate, hands-on Head Chef to lead the kitchen of our flagship BA GÁC restaurant. This role is key to expressing our culinary identity: creating modern Vietnamese grilled dishes that blend Asian fusion techniques while preserving the soul of Vietnamese cuisine. You’ll oversee daily kitchen operations, lead a team of 8, manage cost controls, and fully own R&D for our seasonal and festive menus. Key Responsibilities

1. Culinary Leadership & Team Management

  • Lead, train, and mentor the kitchen brigade across multiple shifts to uphold high culinary standards.

  • Manage 4 active kitchen stations: grill, cold, wok, and pastry.

  • Foster a high-performance kitchen environment with discipline, collaboration, and creativity.

  • Schedule, train, and assess staff performance; build a kitchen culture aligned with BA GÁC values.

2. R&D & Menu Innovation

  • Design and develop 4 seasonal menus annually: New Year, Summer, Fall, and Festive.

  • Innovate modern Vietnamese grilled dishes with Asian fusion elements while maintaining Vietnamese authenticity.

  • Lead dish testing, standardization, and final rollout with cost, prep, and service feasibility in mind.

  • Work closely with marketing and operations to ensure brand consistency in menu storytelling and execution.

3. Kitchen Operations & Cost Control

  • Manage prep, production, and plating flow for both in-house and commissary operations.

  • Maintain food cost percentage, inventory accuracy, and waste control.

  • Ensure kitchen hygiene, food safety, and compliance with Vietnamese F&B regulations.

  • Oversee supplier relations and purchase planning with the support of the purchasing team.

4. Quality Assurance & SOP Implementation

  • Standardize all recipes, portioning, and presentation with clear SOPs.

  • Conduct daily tastings, portion checks, and final QC before service.

  • Drive consistency, efficiency, and excellence across all dishes served.

Requirements

  • Culinary degree or equivalent training.

  • 7+ years of experience in professional kitchens, 3+ years in a head chef or executive role.

  • Deep experience in Asian cuisine and modern cooking techniques (e.g., sous vide, fermentation, live-fire, etc.).

  • Strong leadership, team-building, and communication skills.

  • Knowledge of food cost control, kitchen workflows, and HACCP.

  • Passion for blending tradition with innovation.
